That looks good. Roasted vegetables are one of my favorite foods. Lately it's been roasted Brussel sprout leaves (just keep cutting off the bottoms until all the leaves are pulled off). And roasted kale -- even the kids will eat that. It is a lot of work to cook without processed food, and even though I don't have issues with grains, I believe everything in moderation, and fruits and vegetables should be our staples, not macaroni and bread. It's hard to convert the masses though!
